This Parmesan Roasted Asparagus with lemon is an easy and flavorful roasted vegetable side dish! Oven-roasted with garlic and red pepper flakes, and tossed with parmesan and lemon, this quick asparagus dish is so flavorful and easy!

Key Ingredients

  • Asparagus: Trim your asparagus by snapping off the bottom 2-3 inches. Wherever the asparagus naturally snaps is where the tough part stops.
  • Lemon: You'll need the zest of half a lemon. You can take the rest of the lemon and slice it into wedges to serve on the side.
  • Parmesan: Freshly grated parmesan is the most flavorful and melts beautifully. Be sure to scrape up those crispy parmesan bits that get stuck on the sheet pan and top the asparagus with it!
  • Garlic powder: For just a touch of garlic flavor!
  • Crushed red pepper flakes: These chili flakes add just a touch of heat! If you want this recipe to be spicy, you can double the amount of chili flakes. For no spice, you can leave these out or substitute for a little freshly cracked black pepper!

Step by step

  1. Prep the asparagus by trimming the tough bottom few inches.
  2. Toss the asparagus with olive oil, red pepper flakes, garlic powder, and salt.
  3. Roast the asparagus until just beginning to turn tender, about 8-12 minutes.

4. Add the parmesan to the asparagus and bake for 2 more minutes, or until melted.

5. Toss the asparagus with lemon zest. Serve the asparagus with lemon wedges.

Expert tips

  • The thickness of your asparagus will affect the cook time. Skinny asparagus will only need about 8 minutes, while thicker asparagus will need closer to 12. Try to opt for a similarly sized bunch at the store so that they all cook evenly.
  • Don’t overcrowd the sheet pan as this can cause the asparagus to steam rather than getting roasted. If making a double batch, grab a second sheet pan to prevent steaming.
  • Shred and measure your cheese in advance. When it is time to add the parmesan, simply sprinkle it quickly over the asparagus and return it to the oven.

Ingredients

  • 1 lb. asparagus
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon crushed red pepper flakes optional, or add more for spicy
  • ¼ teaspoon garlic powder
  • ½ cup freshly grated parmesan cheese
  • ½ lemon zested and cut into wedges

Instructions

  • Preheat the oven to 425. Line a baking sheet with parchment paper or a nonstick baking mat..
  • Prep the asparagus by trimming the tough bottom portion (typically 2-3 inches).
  • Toss the asparagus with olive oil, salt, red pepper flakes, and garlic powder and add it to the baking sheet. Roast for 8-12 minutes, or until just beginning to turn tender. Sprinkle the asparagus with the parmesan and return to the oven for about 2 more minutes, or until the cheese has melted and the asparagus is tender.
  • Remove the asparagus from the oven and toss with the lemon zest. Plate the asparagus, including any of the parmesan that may have fallen off and crisped up on the sheet pan. Serve with lemon wedges on the side, if desired.
