1lb.asparagus
1tablespoonolive oil
½teaspoonkosher salt
¼teaspooncrushed red pepper flakesoptional, or add more for spicy
¼teaspoongarlic powder
½cupfreshly grated parmesan cheese
½lemonzested and cut into wedges
Instructions
Preheat the oven to 425. Line a baking sheet with parchment paper or a nonstick baking mat..
Prep the asparagus by trimming the tough bottom portion (typically 2-3 inches).
Toss the asparagus with olive oil, salt, red pepper flakes, and garlic powder and add it to the baking sheet. Roast for 8-12 minutes, or until just beginning to turn tender. Sprinkle the asparagus with the parmesan and return to the oven for about 2 more minutes, or until the cheese has melted and the asparagus is tender.
Remove the asparagus from the oven and toss with the lemon zest. Plate the asparagus, including any of the parmesan that may have fallen off and crisped up on the sheet pan. Serve with lemon wedges on the side, if desired.
