This Pomegranate Guacamole recipe is the perfect easy but elevated guacamole recipe! The red and green make for a festive holiday or Christmas guacamole, but it is a delicious and impressive year-round appetizer and side!
I first had guacamole with pomegranate seeds at Barrio Queen in Scottsdale which serves their guacamole tableside, and let me tell you... adding the pomegranates was life-changing! Pomegranates bring guacamole to a whole other level. This pomegranate guacamole is one of the easiest appetizers to make but you are guaranteed to get compliments from anyone you share it with!
Key Ingredients
I like to keep my guacamole simple with just a few delicious ingredients! Diced jalapeno, onion, or cilantro are great additions if you prefer more ingredients.
- Pomegranate seeds: The pomegranate seeds add sweetness to the creamy and acidic guacamole. They also have a slight crunch to them, which pairs great with the soft avocado.
- Avocados: I recommend ½ - ¾ of an avocado per person, depending on how many other things you are serving. It is always a good idea to pick up an extra avocado or two, in case any of them are over-ripe.
- Limes: to get the most juice out of your limes, slice the limes around the tough fibrous center.
- Garlic salt: if you can't find garlic salt, you can also use a combination of garlic powder and salt.
How to make pomegranate guacamole
- Smash together the avocado, lime juice, garlic salt, and pepper until you reach your desired consistency.
- Top with fresh pomegranate seeds and serve!
Expert Tips for the perfect guacamole
- To tell if your avocados are ripe, wiggle the stem that it at the top of the avocado. If it wiggles easily or falls off, it is ripe!
- Keep unopened avocados on the counter until they are perfectly ripe. Once ripe, keep them in the fridge for extended life.
- Top the guacamole with about half the pomegranate seeds to start. As it is devoured, add the rest halfway!
Serving Suggestions
