These fudgy Chocolate Cherry Brownies are loaded with lots of chocolate, extra chocolate chips, and fresh cherries. The tart cherries and rich chocolate make for an irresistible and easy dessert!

How to make brownies with cherries
Fresh cherries can be added into your favorite boxed brownie mix, but I love making brownies from scratch! With just a few staple pantry ingredients, you can have gooey and homemade brownies!
1. Melt the semi-sweet chocolate and butter together in a microwave-safe dish in the microwave. Alternatively, you can melt the chocolate and butter together over a bain marie on the stovetop.
2. Add in the sugar, vanilla, oil, and eggs. Be careful not to overmix once the eggs are added as this can cause the brownies to be stiff. Add in the flour, cocoa powder, and salt.
3. Fold in the quartered and pitted fresh cherries and chocolate chips.
4. Add the batter to a parchment-lined 9x9 or 8x8 baking dish. Bake at 350 degrees for 15-20 minutes, or until a knife comes out clean.
Types of cherries to use
I love using fresh cherries, and they are my favorite for this recipe! This is a great dessert for using up those fresh summer cherries from your garden. That said, you are welcome to try these with dried or jarred cherries.
If you use jarred cherries, pat them well-dry before using them. And make sure marischino cherries are something you enjoy on their own-- many people feel strongly one way or the other about how sweet they are. (Personally, I find them to be way too sweet).
Note that dried cherries are a much chewier consistency than fresh cherries. They should still work, but you will have extra chewy bites.
Storage and prep ahead tips
The brownies can be made up to 3-5 days in advance and stored in an airtight container in a cool dry place.

Chocolate Cherry Brownies
Ingredients
- ½ cup unsalted butter
- 1 cup semi-sweet chocolate chips divided
- ¾ cup granulated white sugar
- 2 tablespoons avocado oil
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder
- 1 ¼ cup all-purpose flour
- ½ teaspoon Kosher salt
- 1 cup halved and pitted cherries
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line a 9x9 baking dish with parchment paper and spray lightly with cooking spray.
- In a large microwave-safe mixing bowl, heat the butter and ½ cup of the chocolate chips for 30 seconds. Stir and heat for another 20-30 seconds, or until butter is melted. Stir so that the butter and chocolate melt together.
- Add sugar to the butter-chocolate mixture and whisk together until fully incorporated.
- Add the oil, eggs, and vanilla and mix until just incorporated (over mixing eggs can make them stiff).
- Fold in cocoa powder, flour, and salt and mix until incorporated. Fold in the remaining chocolate chips and the cherries.
- Pour into baking dish. Bake for 15-20 minutes, or until a toothpick comes out with just a few crumbs attached (test in a few places; the toothpick will look very wet if you run it through a chocolate chip). Cool before slicing.
