Instructions
Crostini
To make the crostini, preheat the oven to 400 degrees Fahrenheit. Arrange the baguette slices in a single layer on a baking sheet.
Brush each slice of bread with olive oil and sprinkle with salt and pepper. Flip the bread and repeat on the other side.
Bake for 10-12 minutes, or until golden brown. Cool. (note: you can prep these up to 1 day in advance).
Whipped Garlic Herb Goat Cheese
In the bowl of a food processor, add the goat cheese, chives, parsley, basil, garlic, olive oil, salt, and pepper. Whip the goat cheese until creamy, about 30-60 seconds, whipping down the sides of the bowl once or twice. Taste, adjusting seasoning as desired. (note: you can prep this part up to 3 days in advance).
Gently spread the whipped goat cheese on each crostini. Sprinkle with toasted pine nuts, drizzle with a little extra-virgin olive (if desired), and serve immediately.

Notes
The crostini can be made up to 1 day in advance and stored in an airtight container in a cool dry place.
The herbed goat cheese can be made up to 3 days in advance and stored in an airtight container in the refrigerator. Note that once it has been refrigerated it can become a bit firmer and have less of that "whipped" airy texture. That said, it will still be delicious! You are welcome to pop it back in the food processor for a few seconds to re-whip it if you'd like!
