Ingredients
1lbbroccolini (also know as broccoletti)
3tablespoonolive oil
¼teaspooncrushed red pepper flakes(optional, adjust for more or less heat)
1teaspoonKosher salt
1.5teaspoonlemon zest
2tablespoonfreshly grated parmesan cheese
Instructions
Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with aluminum foil or parchment paper.
Trim the bottom ½ inch off each piece of broccolini (not the floret side). Place the broccolini on a sheet pan and toss with the olive oil, red pepper flakes, and salt. Arrange the broccolini in a single, spread out layer.
Roast for 15-20 minutes, or until broccolini is tender and the florets are slightly browned, tossing half way. Toss with lemon zest and parmesan and serve immediately.
