1lbloaf of breadpreferrably sourdough, ciabatta, or French
½cupbuttersoftened to room temperature
¼cuplight mayo
1cupshredded mozzarella cheese
5cloves of garlicgrated
½teaspoonred pepper flakesoptional
2tablespoonchopped parsley
½teaspoonkosher salt
Instructions
Preheat the oven to 375 °F
Slice the bread in half lengthwise. Score the bread crosswise by cutting ¾ of the way down every few inches. This is where you will ultimately cut it to serve so try to line up the scores on each half.
In a medium mixing bowl, combine the rest of the ingredients until well incorporated. Spread the mixture evenly across both halves of bread.
Place the two halves of bread back together. Wrap the entire loaf in aluminum foil.
Bake for 30-40 minutes, or until the cheese is well melted.
To serve, remove the bread from the foil and cut along the scores. Serve hot.
Notes
The temperature this garlic bread bakes is flexible. If you have another dish baking in the oven at 350° or 400°, go ahead and pop the bread in with it. It may just need a few minutes more or less, depending on if you decrease or increase the temperature.
For a more subtle garlic flavor, reduce the number of cloves.
The red pepper flakes add just a slight kick, but feel free to use more to make it spicy, or omit to make it have no spice.
