Ingredients
Crostini
1French or sourdough baguettesliced ½ inch thick
3tablespoonolive oil
Kosher salt and pepper
Whipped Ricotta, Pistachios, and Honey
1.5cupswhole milk ricotta cheese
3teaspoonextra-virgin olive oil
½teaspoonfinely chopped fresh thyme
¼teaspoonKosher salt
¼teaspoonfreshly cracked black pepper
3tablespoonroughly chopped toasted pistachios
2tablespoonhoney
Instructions
Crostini
To make the crostini, preheat the oven to 400 degrees Fahrenheit. Arrange the baguette slices in a single layer on a baking sheet.
Brush each slice of bread with olive oil and sprinkle with salt and pepper. Flip the bread and repeat on the other side.
Bake for 10-12 minutes, or until golden brown. Cool.
Whipped Ricotta, Pistachios, and Honey
In the bowl of a food processor, add the ricotta, olive oil, thyme, salt, and pepper. Whip the ricotta until light and creamy, about 1-2 minutes. Taste, adjusting seasoning as desired.
Gently spread the whipped ricotta on each crostini. Sprinkle with pistachios and drizzle with honey.
Notes
If you don't have a food processor, you can use a hand or stand mixer or whisk by hand (whisking by hand may take longer).
If you'd prefer for guests to top their own crostini, serve the crostini, whipped ricotta, pistachios, and honey next to each other and allow guests to help themselves.
