Ingredients
28ozfrozen edamame in shells
2tablespoonunsalted butter
1tablespoongrated garlic
1teaspoongrated ginger
⅓cuplow sodium soy sauce
1dashsesame seedsfor garnish, optional
Instructions
Steam the edamame by placing the frozen edamame in a large microwave-safe bowl and cover with a paper towel. Microwave for 2 minutes, or until edamame pods can easily pop out of the shell.
Heat a large pan or wok on medium-high heat and add the butter until melted. Add the garlic and ginger and stir until fragrant, about 1 minute. Add the soy sauce and turn the heat down to medium-low to simmer for about 5 minutes, or until the sauce begins to thicken.
Add the edamame to the pan and give it a good stir and coat the edamame in the sauce. Top with a dash of sesame seeds and serve immediately.
Notes
To steam the edamame, you can also use a steamer on the stovetop.
These are best enjoyed straight from the pan. Should you have leftovers, you can saute them on medium heat on the stove until reheated.
